Chapman Hill's cool to mild climate provides ideal conditions for great sauvignon blanc to be grown. The gravelly loam soils and rocky ironstone terrain delivers distinctively varietal sauvignon blanc that is unique to Chapman Hill.
Our sauvignon blanc wine style is based on the wines from the french region of Graves (near Bordeaux) and the southern areas of Austria.
During fermentation, 20% was fermented in new and one year old french oak barrels, with the balance fermenting in tank. After fermentation, the wine remained on yeast lees in tank and barrel for 12 months to enhance palate weight and flavour complexity. The wine was bottled in mid April 2010.
Tasting Notes
Our 2009 Sauvignon Blanc is a wine of great intensity and complexity. Aromas and flavours of white peach, pear, grapefruit and lemongrass, are mixed with a touch of creamy sweet lemon, and mild chalky, mineral character which is typical of our vineyard. There are hints of nutty, toasty flavours from barrel fermentation and maturation on yeast lees. The palate is soft and generous, with refined fruit flavours, and balanced by a fine tannin structure.
