Chapman Hill's cool to mild climate provides ideal conditions for truly great cabernet sauvignon to be grown. The gravelly loam soils and rocky ironstone terrain delivers distinctively varietal cabernet sauvignon that is unique to this area.
Following fermentation, the wine was matured in 100% new french oak barrels for 22 months. The wine was blended and bottled in late March 2011.
Tasting Notes
The 2009 Elevation Cabernet Sauvignon is a complex and intense wine with aromas of mint, blueberries, tobacco leaf and dark chocolate, with a lifted flinty, chalky character that is typical of our vineyard.
Complex layers of flavours unfold on the palate. Blueberries, dark chocolate, mint and fresh blackberries, mixed with mocha and hints of nutmeg. The flavours are complemented by fine textured grainy tannins. The finish is long, with lingering flavours of mint and blueberries.
